2004年4月、当初まだロボット寿司が主流だった香港回転寿司の中で「本物の美味しい寿司を食べてほしい」という思いで手握り本格回転寿司店をコーズウェイベイのPak Sha Rd.にオープンさせました。
日本の峰寿司と同じネタ、日本で修行を積んだ職人による本物の技術で手握り寿司の美味しさを手頃な価格で提供する事で、オープン当初から多くのお客様にご支持頂き、その後の香港での回転寿司ブームの火付け役となりました。

In April 2004, we opened an authentic hand-rolled conveyor-belt sushi restaurant on Pak Sha Rd. in Causeway Bay, with a desire to provide customers with "authentic and delicious sushi" at a time when robot sushi was still the mainstream in the conveyor-belt sushi market in Hong Kong.
By offering the same ingredients as those at Mine Sushi in Japan and authentic sushi made by Japanese-trained chefs at a reasonable price, the restaurant was well received by customers from the first day it opened, sparking the conveyor belt sushi boom that followed in Hong Kong.
